D and I just got back home from a random Tuesday night movie date.  Now, paying $20 PER PERSON to see a movie is not something I would normally ever advocate, but I have to say – Gravity in IMAX 3D was completely and totally worth it.  I also have a general thing against 3D movies – wearing those glasses makes me nuts – but I was trying to time to movie so that we would go right around when Daren gets off of work, since the theater is fairly close to his office, and the timing for the regular showing just wouldn’t have worked.  In this case, the 3D was pretty darn cool – even if it did make me dizzy for the first 10 minutes or so.  Long story short, awesome movie – go see it. Seriously.

When we made it back home, I was totally wishing we had some of this guacamole to snack on.  I’m a big fan of snacking; I much prefer it to regular eating.  Entrees? Forget that – appetizers are definitely my favorite part of any meal.  And any appetizer that combines avocado, lime and salt works for me.  Even better, guacamole works for more than just a snack – for example, it’s perfect for topping things like burgers with!  The only challenging part about it is that the avocados will of course start browning eventually, making it difficult to keep any leftovers for long.  Guess you’ll just have to eat it all at once!

Side note – we did not have any guacamole (or chips, for that matter) in the house, so we got stuck eating leftover spicy sausage flatbread from Harvest Seasonal Grill in Glen Mills.  Poor us :)


  • 3 ripe avocados
  • 1/4 sweet onion, finely chopped
  • 1 jalapeño, seeds and ribs removed, finely chopped
  • Juice of 2 limes
  • 2 tablespoons fresh cilantro, finely chopped
  • salt, to taste


Using a sharp knife, split the avocados and remove the pits.  Scoop the flesh into a medium bowl and mash with a fork or potato masher until relatively smooth.  Add in the remaining ingredients and continue mashing until the guacamole is the texture you prefer; I like to leave in just a little chunkiness from the avocados.  Continue adding salt a little at a time, tasting as you go; you may have to add a decent amount to get the taste right.  The salt will really bring out the flavor of the avocados, so don’t be afraid to use it!

A quick note – this recipe will make guacamole the way we like it, which is with a little heat from the jalapeños and lots of lime.  You can adjust the amounts of all of the ingredients to better suit your personal taste.  Guacamole is also awesome with some extra mix-ins, like chopped tomatoes or grilled pineapple (my favorite).  Play around and make it your own!
