strawberry yogurt popsicles

Ever since reaching the 3rd trimester, the dessert cravings have hit. Hard.  And more often than not, those cravings call for something cold, like ice cream… or sometimes water ice, or a popsicle.  Instead of trying to ignore the cravings completely (which I’d never be able to do… come on) or giving in entirely, I’ve been trying to find some healthier – or at least less ridiculous – ways to satisfy them.  With these popsicles, I think we’ve actually fallen solidly into the healthy side of things!  Consisting mainly of strawberries and Greek yogurt, there’s not much to complain about ingredient-wise with these.  Better for mommy, better for baby… and certainly better for mommy’s (nonexistent but will hopefully come back someday) waistline.  Bonus – they’re light and refreshing, a little tangy from the yogurt, and overall a perfect summer snack!

  • 2 cups coarsely chopped strawberries
  • ¼ cup Greek yogurt (low fat or fat free works fine)
  • 1½ teaspoons freshly squeezed lemon juice
  • 1½ teaspoons vanilla extract

Combine all ingredients in a blender or food processor.  Process until smooth (or you could leave some strawberry chunks in there – whatever works for you).  Pour into a popsicle mold and freeze, adding the popsicle sticks after approximately 30 minutes.

*I use this popsicle mold.

Yield: 5-6 popsicles (my mold holds 10 popsicles, so you could easily double this recipe to fill it)

berry vanilla ice cream cake

July is a very special month… and not just because my birthday falls in it Nope, July is National Ice Cream Month! And what better way to celebrate than with a gorgeous (and delicious) ice cream cake? I love to make ice cream, and we actually make it pretty frequently around here.  You’d never know […]

blueberry pancake cupcakes

So a few days ago I promised you a new cupcake recipe that utilized that super-easy-and-delicious blueberry sauce… and here it is! I have been dying to make “pancake” cupcakes for a long long time now, but I always felt like I couldn’t quite find the right occasion.  They’re kind of breakfast-y, so they’d be […]

salted caramel apple crumble

I am so excited to get into late spring/summer with our CSA share.  Don’t get me wrong, we loved having the fresh veggies throughout the winter – but, as is to be expected, the variety wasn’t quite what it is in the warmer months.  Since everything is fresh and local, we’re hardly getting sweet corn […]

lemon blueberry cupcakes

It is amazing to me that I haven’t shared these cupcakes with you guys yet.  I make these more often than probably any other cupcake, and yet I never seem to remember to snap a photo before carting them off to one place or another!  They’re one of my go-to recipes whenever I’m asked to […]

ABC – crusty apple pie

When it comes to pies, which camp do you fall into – crust lover, or filling lover?  I won’t hesitate to say that I am pretty solidly on the crust lover side of things.  I mean, come on – eating a piece of pie is really just a socially acceptable way to eat a whole […]

skillet peach crisp

Remember how I mentioned that we’ve been getting peaches in our CSA all summer long?  Well way back in June, this was the very first recipe I made with them (this summer, anyway).  It was inspired by an AWESOME skillet apple crisp I had made (which, unfortunately, I never took a picture of before we […]
