blueberry pie smoothie

So after almost 3 months owning the Vitamix, Daren and I are still going strong on the smoothies!  He tends to prefer thinner, green juices, while I like nice thick smoothies (often with some greens in them as well!)  I was getting some complaints from him about all the frozen berry & banana drinks I was making, so finally I told him to go ahead and make his own if he wasn’t happy with what I was making :) Luckily, he decided to do just that, often making a big pitcher of juice in the evening and bringing it to work the next day.  This morning he went off to work with his kale/banana/apple/pineapple/whatever else drink, and I decided to try out a new smoothie for myself.  This one definitely deviates from my normal set of ingredients, but it was a hit nonetheless.  The oats and pecans combined with the various spices give it that “pie” flavor, while the coconut milk keeps it thick and creamy.  Good thing we always have lots of blueberries in the freezer, since I foresee us making this again soon!


  • 1 14-ounce can light coconut milk
  • 1 cup frozen blueberries
  • 1 banana
  • 1/4 cup rolled oats
  • 1/4 cup pecans
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • optional – shredded coconut, for serving


Combine all ingredients in a high-powered blender (if you don’t have a high-powered one, you may have trouble getting the nuts or oats to combine completely – but give it a shot!).  Process until smooth.  Garnish with shredded coconut if desired.

Yield: 2-4 servings (this one is really thick, so I definitely think you could get 4 servings out of it!)
