baked onion dip

The Super Bowl is almost here, and you know what that means – it’s appetizers and dips time!  I mean seriously – Super Bowl parties are obviously just a thinly veiled excuse to eat lots of less-than-great-for-you-but-oh-so-delicious foods.  Like this baked onion and parmesan dip.  I first made this dip for a New Year’s Eve party, and let me tell you – whoa. Ooey gooey cheese, baked up with sweet onions?  Can’t really go wrong there.  The other awesome thing about this party food is that it couldn’t be simpler – it’s only 5 ingredients, all of which you likely have on hand, mixed together and then thrown in the oven to bake.  Classic example of the whole being better than the sum of its parts right there.  You could even mix the dip early in the morning, then bake it off right before your guests arrive.  Now that’s a perfect party food.

  • 8 ounces cream cheese, at room temperature
  • 1 cup mayonnaise (light mayo worked fine)
  • 1 cup diced sweet onion
  • 1 cup freshly grated Parmesan cheese
  • 1 tablespoon freshly ground black pepper

Preheat the oven to 350°F.  Stir all ingredients together until thoroughly combined.  Transfer to a small baking dish (a 1 quart dish worked perfectly).  Bake for 45-55 minutes, until the top is a deep golden brown.  Serve warm with baguette slices, crackers, chips, or whatever else you desire!

D and I just got back home from a random Tuesday night movie date.  Now, paying $20 PER PERSON to see a movie is not something I would normally ever advocate, but I have to say – Gravity in IMAX 3D was completely and totally worth it.  I also have a general thing against 3D […]

how to: make your own hummus

As I mentioned before, we eat a lot of hummus around here.  I tend to eat lunch fairly early, so by the time I get home from school I’m usually pretty hungry – and it’s still way to early to think about dinner.  While I do love hummus from Trader Joe’s, and will buy that […]

jalapeño popper dip

Super Bowl Sunday is almost here! Usually, I don’t watch much football.  I don’t have anything against it, there’s just usually a lot of things I’d rather be doing and I never think to turn it on.  If friends want to go to a bar and watch a game I’ll gladly go, but I probably […]
