Crockpot cooking. Perfect for busy days, and for making nice warm comfort food on a cool fall day. One way to make crockpot cooking even easier than it already is? Make a dish that only has 4 ingredients in it.
Seriously people. 4 ingredients. And from those 4 ingredients you get a surprisingly tasty white chicken chili, perfect for, say, eating around a fire while sitting in your driveway waiting for trick-or-treaters!
Okay, so we didn’t do that this year because we were worried that it would be too cold for the baby, but we DID eat white chicken chili. And we have done it in the past Regardless, I know we’ll be eating this a lot this winter, especially once I go back to work and have no interest in doing anything but cuddling Aria when I get home (sad face)!
Ingredients
- 4 (15-oz) cans white beans, drained and rinsed
- 2-3 boneless, skinless chicken breasts, trimmed of fat
- 8 ounces Pepper jack cheese, cut into cubes
- 3 cups salsa (any type you prefer)
*You could easily alter this recipe by trying different types of salsa, adding jalapeños, or trying different types of beans or cheese. Go crazy!
Directions
Add all ingredients to the crockpot. Cook on low for 6-8 hours. Remove the chicken breasts, shred and return to the crockpot. Stir and serve hot.
